Water – filtered water is best
Honey – For this recipe you want a nice liquid honey. I am lucky enough to live down the road from a honey farm. It is kind of fun – the bees visit my garden and collect pollen, and then I buy the honey they make.
White Sugar
Dried Culinary Lavender – This is the dried culinary lavender that I used. Make sure the lavender you choose has no added dyes, and is culinary grade.
You can also use fresh lavender buds if you know that they have not been treated in anyway. You will just need double to triple the amount of flower buds.

How to Make Lavender Simple Syrup
This recipe is actually super easy to make. If you have ever made any type of syrup or hummingbird feeder nectar, then you got this!
I have actually adapted this recipe from a light syrup recipe I found in my favorite canning recipe book. The same one I use for canned peaches.
Step 1
First, add the water, sugar, and honey to a small saucepan on the stove. Use a whisk and whisk continuously as you heat it over medium high heat. You want to heat it until it is just starting to boil.
Once the sugar and honey have dissolved and incorporated into the water, you can turn off the heat.

Step 2
Now you can remove your saucepan from the burner and set it on the counter on a pot holder or trivet. Add in your dried lavender while the syrup is still good and hot.
You may get a little purple coloring to your syrup from the lavender buds depending on the quality you use. However, I found if I just add 2-3 frozen blueberries during this step it creates a really nice purple color.

Step 3
Now put a lid on your syrup to keep all that good flavor in there. Let it steep for about 15-20 minutes. The longer you steep it, the stronger the lavender flavor will be.
I don’t want too strong of a flavor, so I found that 15-20 minutes is just right.

Step 4
Once your lavender simple syrup with honey has finished steeping, you can strain it through a fine mesh sieve. I strain mine straight into a canning jar that I will later store it in.

Step 5
It can be stored in a glass jar with a tight fitting lid in the fridge. I found this recipe fits perfectly into a half-pint (250ml) canning jar. You will end up with just over 1 cup of syrup total.

Uses for Honey Lavender Syrup
You can use this syrup for many different things. I enjoy it in tea, and my husband likes it in his coffee once in a while. It really adds a nice sweet, floral flavor that you do not normally find elsewhere.

Simple Honey Lavender Syrup
Ingredients
- 1 cup water
- 1/4 cup honey
- 1/4 cup white sugar
- 3 tbsp dried culinary lavender
- Optional: 2-3 frozen blueberries
Instructions
- Combine water, honey, and sugar in a saucepan on the stovetop
- Bring to just a boil over medium heat, while stirring continuously until sugar dissolves
- Remove pot from the burner and add 3 tbsp of dried culinary lavender buds
- Optional: add 2-3 frozen blueberries with the lavender buds to add purple color to your syrup
- Cover with a lid and let steep for 15-20 minutes (longer if you want a stronger flavor)
- After you have steeped it as long as you want, strain out the lavender buds, and store in a glass jar with a lid
- Keep it in the fridge for up to 2 – 3 weeks
